Cuvée Sélect
The perfect accompaniment to any occasion. Select Réserve charms with its perfect balance and will seduce anyone who loves full bodied and fruity champagne. The purest expression of a unique terroir: the Marne Valley.
Genetic : 100% Meunier, Blanc de meuniers.
Appearance : Its straw colour delivers a fine fizz complimenting a lovely finish.
Nose : Fresh, fruity scent with hints of citrus, minerals & yellow apple.
Taste : Complex red berries, citrus and minerals. Well balanced with a fine mousse and fresh finish.
Aging process : Minimum 4 to 5 years before selling.
Methods : Non malo-lactic fermentation , we keep the natural freshness of the grapes.
Dosage : Brut. Low sugar level:about 6 to 7g/l.
Side Dish : This champagne is perfect for any festive or social event. It can be enjoyed as an aperitif or with dessert.
Available in bottles, in half bottles and magnum bottles.
Cuvée Trianon
Cuvée Trianon (the flagship Cuvée of the Lemaire House) is a blend of 60% Pinot Noir and 40% Chardonnay. Matured in temperature controlled steel vats and the alcoholic fermentation is maintained by 16 degrees to preserve the wines delicate aromas. This champagne is our best awarded bottle.
Grape Varietals : 40% Chardonnay and 60% Pinot Noir.
Appearance : Pale gold, crystal clear, pearlescent bubbles.
Nose : Fresh youthful nose, yellow citrus flowers, orchard fruits with hints of fennel and cream, shortcake pastry.
Taste : Charming fine mousse, fruit jelly, pear and a mature finish with brioche tone.
Aging process : Minimum 4 years-old before selling.
Method : No malo-lactic fermentation, we keep the natural fresh of the grapes.
Dosage : Brut. Low sugar level:about 6 to 7g/l.
Side Dish : Fish, foie gras, excellent as aperitif (before eating)

Rosé De Saignée
A blend of 50% Pinot Noir and 50% Meunier. The unique taste and colour are obtained by maceration with the skins in stead of blending with red wine, a common method in champagne.
Genetic : 50% pinot Meunier and 50% Pinot Noir.
Appearance : Beautiful raspberry red colour.
Nose : Strong red berries with raspberries and strawberries at the forefront, citrus and toasted bread.
Taste : Smooth mousse dominated by red berries with grapefruit followed by minerals and a long elegant finish.
Aging process : Minimum 4 years-old before selling.
Methods : Non malo-lactic fermentation malo-lactic, we keep the natural acidity of the grapes.
Dosage : Brut. Low sugar level:about 7 to 8 g/l.
Side Dish : Chicken, fruit-based desserts, barbecue…
Trianon 66
Trianon is a legacy of Mr Roger-Constant Lemaire who transformed this brand into a family emblem in 1966. The family honours this memory 50 years later with the birth of the Trianon 1966, a chic and elegant bottle for a clientele that wishes to make history.
Grape Varieties : 40% de chardonnay , 50% Pinot Noir and 10% Pinot meunier.
Appearance : Light golden appearance, an almost transparent purity.
Nose : Notes of citrus, with a lot of freshness.
Taste : Fine and light, flavour oriented to pineapple and passion fruit.
Ageing process : Minimum 5 years in the cellars.
Methods : Non fermentation malo-lactic, we keep the natural acidity of the grapes.
Dosage : A Brut Champagne. Low sugar level (about 6 to 7g/l) using only cane sugar.
Side Dish : White meats and fish.
Les Hautes Prières
Champagne Millésime (Vintage) Blanc de Blancs. 9 months in oak barrels and matured in the cellars. This champagne has been made with our best vineyards from Hautvillers, where champagne is born, and got the award of the best Chardonnay of the world.
Genetic : 100% Chardonnay, Blanc de Blancs.
Appearance : Shimmering pale gold with very fine bubbles.
Nose : Oak barrel ageing produces a complex buttery, fruity (apple and peach) and fresh Champagne.
Taste : Presence in the mouth is subtle, even buttery and fruity (pear). These notes can be noticed in a fresh and balanced fine wine with a pleasant finish.
Ageing process : 5 to 7 years-old
Methods : No malo-lactic fermentation, we keep the natural freshness of the grapes.
Dosage : Brut. Low sugar level:about 6 to 7g/l.
Side Dish : Foie gras and fish. Excellent for aperitif.
Vintage Rosé De Saignée
A cuvée that makes a full claim on the Pinot Noir grape variety, with a beautiful aromatic power and a remarkable minerality. An exclusive vintage edition in extra brut with a longer maturation in the cellar.
Age: Since 2013 in our cellars.
Grape varietals: 50/50 % Meunier, Pinot Noir 2012.
Appearance: The wine has a beautiful coppery colour with tints of terracotta. The effervescence remains fine and light.
Nose: Aromas of red and black fruits as well as stoned fruits. A beautiful, rather assertive signature that will delight rosé lovers with an added splash of sea spray.
Taste: Dominated by the expression of Pinot Noir with aromas of stone, dried meat, tobacco and violet. It has a beautiful aromatic power and a remarkable minerality.
Food and wine pairings: Poultry or game meats. Red fruit
sabayon.
Blanc De Blancs
A perfectly mastered woody Champagne with exceptional freshness. With its Hautvillers grapes, this Blanc de Blancs 1st cru is an exclusive extra brut edition with a longer maturation in the cellar.
Age: Since 2011 in our cellars.
Dosage: Exclusive and limited edition in
extra brut 3 to 6 g/l. 100% homemade liqueur, organic
cane sugar.
Grape varietals: 100 % Chardonnay, 2010, 1st cru.
Appearance: Yellow with golden reflections. The foam is fleeting and delicate.
Nose: A beautiful expression of associated pastries, chocolate and
cocoa along with fresh vanilla bean and citrus fruit.
Taste: Perfectly controlled woody wine with notes of wax, honey and exotic fruits pineapple, coconut, menthol.
Food and wine pairings: This is an exceptional wine for special occasions with oriental and balsamic spices. To pair with noble fish cooked au naturel or with Thai cuisine.
Collection
The most prestigious signature of Lemaire. Handcrafted, artisanal, exquisite and rare. Released during the finest vintage years in limited numbers, production around 2300 bottles per vintage and 1200 for sale every year. Meticulous selection of the best grapes and harvest years, with masterfully blended equal portions of pinot noir, meunier and chardonnay.
Age: Since 2010 in our cellars.
Dosage: Exclusive and limited edition in extra brut 3 to 6 g/l. 100% homemade liqueur, organic cane sugar.
Grape varietals: 1/3 Chardonnay, 1/3 Pinot Noir and 1/3 Meunier.
Appearance: Deep golden hue. The foam is generous and abundant.
Nose: Woody with notes of salted butter, caramel and gingerbread. The vintage character of this wine with its blend of stewed fruits and cooked pears is unmistakable.
Taste: It has a nice freshness with its noble bitterness with notable
liquorice and lemon balm.
Food and wine pairings: Fine gastronomy. Lobster au gratin with crunchy vegetables or crab estouffade with morels. In contrast, with pumpkin gazpacho and Japanese pepper.

Nez : Complexe aux arômes de noisettes, d’amandes fraîches et de chèvrefeuille.

Cépages : 50% Meunier, 50 % Pinot Noir.
Nez : Aromes de fruits rouges, noirs ainsi que de fruits à noyau. Une belle signature plutôt affirmée qui ravira les amateurs de rosé sans compris qui nous transporte dans une dimension saline d’embruns marins.
Bouche : La bouche est dominée par les fruits confits avec des notes de miel, caramel et de violette.
Vieillissement : Minimum 4 ans dans nos caves.
Dosage : Brut entre 7 et 9 g/l.

Nez : Une belle expression de viennoiseries associées, de chocolat et de cacao en passant par la gousse de vanille fraiche et d’agrumes.
Bouche : Vin boisé parfaitement maitrisé avec des notes de cire, de miel et de fruits exotiques (ananas, noix de coco, menthol).
Vieillissement : Depuis 2012 dans nos caves.
Dosage : Édition exclusive et limitée en extra brut 3 à 6 gr/l. Liqueur 100% maison, sucre de canne bio.

Concept : Le Mathusalem Peinture d’art “Lapis Lazuli” est une pièce unique, fait main, reproduction quasi à l’identique de la pierre semi précieuse “Lapis Lazuli” originaire des montagnes d’Afghanistan. Dans l’antiquité il était utilisé comme pierre ornementale ou en pigment pour
le bleu outremer.
Cépages : 100% Chardonnay, 1er cru Hautvillers.

GRAND TRIANON
Concept :Le Mathusalem “Jurojin”, un des Sept Dieux du Bonheur, est le Dieux de la Longevité. Sur le thème du Bonheur, fait main, sur fond rouge, sont insérées de feuilles cuivre qui viennent s’accorder à sa coiffe “d’Antan” en toile de jute et lanière, qui nous ouvre une porte sur le passé.
Cépages : 60% Pinot Noir, 40% Chardonnay.
Vieillissement : Minimum 10 ans dans nos caves. Cette édition Grand Trianon est vielli dans son écrin d’origine (non transvasé).
